That's not what being evil is about. An evil person doesn't need to be a murdering psycho and personally I found the sudden alignment change at the end of SoA a bit... unrealistic, for a lack of better word. You've been good for your entire way and now you're turning evil for one act, even if it's listening to a demon? Don't buy it.
And harvesting organs of fallen foes isn't really only way to show one is evil. I imagine it would be much subtler: a violent streak here and there, being more reserved, showing more cruelty than it would be required, occasional bout of bloodlust... stuff like that. One can be evil and not have people around them notice.
I'm all for it, but like I said. Don't assume that if PC becomes evil at the end of hell trials s/he automatically becomes a murdering psycho. Or that even Imoen would notice.

I agree with the whole 'one evil action turns you from CG to LE'. I remember when I first saw what killing the genie did to my alignment. I kinda went "WTF?" for a minute. I could understand if you chose the evil choices for all 5(or was it 6?), but going evil for just one? A tad much, innit?
And again, I agree with your point on there being different levels and types of evil(cruelty and such). Though sometimes, the aforementioned cruelty can be unintentional, but that's another matter, in my opinion.
I kinda disagree with the 'Imoen-not-noticing' bit, though. Even if it takes some time, I'd imagine some sort of indication would eventually pop up. Maybe not immediately, but still...
And the comment about spleens was mostly just me messing around. Though the quote comes from the amusing half-dragon warrior enemies in NWN: "Your remains shall decorate my home."
